WHAT'S FOR DINNER??
I hate dinner and most days am too rushed to bother or feel like a short order cook. I have a very picky eater who literally just started to eat chicken (and only on a bun with tons of ketchup!). Would love to hear what you're making and try some new recipes.
Here's one of our stand by's (and No, Ben does not eat this one either!)
Black Bean Salsa Chicken - Serves 6,
Prep Time: 10 mins Total Time: 1/2 day
6 boneless chicken breasts, chopped
2 (15 ounce) can corn, drained (or frozen equivalent)
1 (15 ounce) can black beans, rinsed and drained
2 cups salsa, separated
8 ounces cream cheese (I use light)
salt and pepper, to taste
rice (optional)
Mix corn, beans and 1 cup of salsa together and put in the bottom of the crock pot. Add the chicken. Salt and pepper to taste if desired. Add 1 more cup of salsa over the top of the chicken.
Cook on low for 6 hours Add 8 oz of cream cheese- cubed and stir in until melted.
Serve over rice

Hey Fine Girls. I'm in the process of organizing the next event. It will be a night of Improv. I am going to send you out the particulars soon. It will be mid March as the Improv teacher I have in mind is in a production until beginning of March and will be free following this. This is a great opportunity to be playful and fun while learning a really cool drama/artform. It will awaken the spontaneity in all of us. Look forward to this next event and it will be right around Jill's 40th so we can celebrate that too!!!

One of the things Christina & I would like to organize is an afternoon or evening event every other week for us to get active with the kids. Sledding, skating, skiing, new waterpark, bike rides, soccer, baseball, geocaching - the possibilities are endless and most can be FREE!! What days work best for you & your kids? What sort of activities would you like to see us do? We will attempt to coordinate the first one in the coming weeks so send us your feedback and watch for the ANNOUNCEMENT!
