I hate dinner and most days am too rushed to bother or feel like a short order cook. I have a very picky eater who literally just started to eat chicken (and only on a bun with tons of ketchup!). Would love to hear what you're making and try some new recipes.
Here's one of our stand by's (and No, Ben does not eat this one either!)
Black Bean Salsa Chicken - Serves 6,
Prep Time: 10 mins Total Time: 1/2 day
6 boneless chicken breasts, chopped
2 (15 ounce) can corn, drained (or frozen equivalent)
1 (15 ounce) can black beans, rinsed and drained
2 cups salsa, separated
8 ounces cream cheese (I use light)
salt and pepper, to taste
rice (optional)
Mix corn, beans and 1 cup of salsa together and put in the bottom of the crock pot. Add the chicken. Salt and pepper to taste if desired. Add 1 more cup of salsa over the top of the chicken.
Cook on low for 6 hours Add 8 oz of cream cheese- cubed and stir in until melted.
Serve over rice
We have a chicken recipe that is a staple in our house....AND it has ketchup - how many kids do you know that don't like ketchup???

chicken pieces (I use breast but your favorites will do)
1 pkg onion soup mix
1/2 C ketchup
1/4 C brown sugar
1/4 C water (I've stopped adding the water b/c it the chicken seems watery these days)
put all ingredients into an oven proof pan with a lid. Bake at 350 for 1.5 hours. Serve over rice with steamed veggies...yum.
